Freshly extruded egg pasta cut in narrow ribbons wider than fettuccine. These long ribbons of pasta are very similar to fettuccine.  They go well with a hearty meat sauce.  Substitutes: fettuccine (slightly narrower, almost identical) OR pappardelle (a wider version)
