Spinach and Ricotta Ravioli with Creamy Spinach and Pine Nut Sauce

Our very own spinach and ricotta ravioli covered in a creamy spinach and pine nut sauce. Spinach and pine nut cream sauce consists of fresh cream, with the addition of milk to lessen the full cream heaviness, fresh/frozen spinach, garlic, toasted pine nuts and parmesan cheese with a touch of seasoning.

Matriciana

Matriciana sauce consists of sautéed bacon, a touch of chilli (mild) in a rich tomato sauce that is simmered with onion, garlic and olive oil then flavoured with garden fresh herbs and seasonings. Matriciana Sauce is a tomato sauce that perfectly accommodates any of our wonderful fresh filled pastas or long pastas. Try it with our pumpkin gnocchi.

Mushroom

A cream and milk based sauce with the addition of sautéed mushrooms, garlic, shallots and chopped parsley then lightly seasoned and finally whipped through the creamy mixture with the addition of parmesan. This sauce fantastically compliments our gourmet range of raviolis and gnocchi’s. Creamy mushroom Sauce is also a great sauce base to create different sauces or simply add to casseroles or accompany any main dishes.

Spinach & Pinenut

A cream and milk based sauce with the addition of sautéed garlic, fresh/frozen spinach, toasted pine nuts then lightly seasoned and whipped through the creamy mixture with the addition of parmesan. This sauce compliments our chicken or vegetarian filled raviolis. Why not try it with our Potato or pumpkin Gnocchi and add mozzarella and crumbled gorgonzola for a gnocchi bake.

Bolognese

Traditional homemade Italian style tomato based sauce that is simmered slowly for hours then has the addition of sautéed premium local minced beef, minced bacon, tomato paste, onion, garlic, red wine, fresh garden herbs and then seasoned well.
Bolognese sauce is fantastic for all our fresh or filled pastas or use as a base in lasagne as we do.

Napoli

A rich tomato sauce, simmered with onion, garlic and olive oil and then with garden fresh herbs and seasonings.
Napoli Sauce is a tomato sauce that perfectly accommodates any of our wonderful fresh filled pastas, long pastas or gnocchi. Napoli is also a great sauce base to create different sauces or simply add to casseroles or accompany any main dishes.

Lasagna

A dish made by baking flat large pasta sheets with layers of sauce and fillings such as cheese or meat.

Our lasagna sheets are pasteurised then layered with select, fresh local meats, continental cheeses (usually mozzarella), and chunky tomato sauce. Depending on the lasagna, a béchamel may also be used. The dish is then baked in a moderate oven until the cheese is golden.

Meat Lasagna

Our Lasagna is a simple southern Italian inspired lasagna consisting of five layers of pasteurised fresh lasagna sheets, topped with our beef bolognese sauce & layered with cheddar, parmesan & mozzarella cheeses on every layer then topped with a napoli sauce and finally sprinkled with mozzarella and Parmesan cheeses. (Orders can be taken for lasagna with a béchamel sauce).

Chicken Lasagna

Our Chicken lasagna consists of five layers of pasteurised fresh lasagna sheets, topped with béchamel, sautéed fillet chicken pieces, leek, spinach and mushrooms and sprinkled with cheddar, parmesan & mozzarella cheeses on every layer then topped with a béchamel sauce and finally sprinkled with mozzarella and Parmesan cheeses. – Chicken lasagna made to order

Cannelloni

Cannelloni are large pasta tubes that are commonly filled/stuffed with a meat or cheese filling then sauced, cheesed then finally baked.

Spinach and Ricotta Cannelloni

A delicate hand cut sheet of pasteurised pasta that is individually hand rolled  with a piped filling consisting of sautéed fresh/frozen spinach (season depending)  that is folded through a seasoned, fresh locally made ricotta.

Pumpkin and Pine Nut Cannelloni

A delicate hand cut sheet of pasteurised pasta that is individually hand rolled with a piped filling consisting of roasted pumpkin pieces, toasted pine nuts and grated parmesan then folded through a seasoned, fresh locally made ricotta.

Chicken and Mushroom Cannelloni

A delicate hand cut sheet of pasteurised pasta that is individually hand rolled with a piped filling consisting of sautéed hormone free chicken fillets, mushrooms with onion and garlic folded into fresh local ricotta, grated parmesan and with a hint of seasoning.

Tagliatelle

Freshly extruded egg pasta cut in narrow ribbons wider than fettuccine. These long ribbons of pasta are very similar to fettuccine.  They go well with a hearty meat sauce. 

Substitutes: fettuccine (slightly narrower, almost identical) OR pappardelle (a wider version)

Fettuccine

Freshly extruded egg pasta in long flat strips wider than linguine. These are long, relatively thick ribbons of pasta.
Egg fettuccine goes well with most sauces although cream sauces seem to be a popular marriage.
Substitutes: tagliatelle (narrower and thinner version), linguine or spaghetti.

Pizza Bases

Our standard bases are a plain pizza base that has been pre-cooked for ease. The bases are made in 6″, 8″, 10″, 12″ and 14″, sold fresh or frozen in rustic, original or wholemeal.
The Pasta Company’s pre-cooked pizza base is a simple yet healthier alternative to a take away pizza.

Simply add the tomato pizza sauce over the top of the base then add mozzarella cheese and your favourite toppings (less is more when pizza is concerned – the simplicity of toppings really showcase individual flavours).
Bake the base until the cheese melts which should be around 10 minutes in a 210°C oven.

Base Pizza Napoli

A plain pizza base spread with tomato sauce with garlic and oregano. This is also called “Pizza Marinara”.
This is a base is ready to use with mozzarella cheese and your favourite toppings. Remember, less is more when pizza is concerned – the simplicity of toppings really showcases individual flavours.
Cook in a 200°C oven for 10 minutes, drizzle with extra Virgin olive oil and serve.

Rustic Italian style Pizza base

Our rustic Italian style pizza bases are perfect for a wood-fired pizza. They hold well, have a wonderful yeasty flavour, with the edges being undefined giving a rustic wholesome look.

Standard thin base

Add a tomato sauce and favourite toppings to make a traditional crispy pizza.
Our thin crust pizza bases are of a high standard using the best ingredients from flours to olive oils.
They are stretched by hand and pushed into trays to give a perfect circular shape, and can be docked or left undocked. They are par-cooked, bagged and frozen immediately to lock in freshness.
